Under Keybindings > Targeting, there is an option of Interact with Target. If you press that key it will interact with whoever you are targeting like questgivers, looting corpses, etc. You should be able to use that in a way that works. Dragonflight is the expansion in which Blizzard is looking to both modernize and futureproof some of the more dated systems in World of Warcraft.
